Restaurant Review: Big Jim's

My family was driving to Minnesota to spend some of the summer there. On the way, we stopped off at a fabulous restaurant called Big Jim's. We had first heard about the place from the show Diners, Drive-Ins, and Dives. So when we were in Pennsylvania, on our way to MN, we couldn't resist going! Here are a couple of the things we ordered at Big Jim's.

The portions were huge, so we mostly shared and didn't order a lot. But the menu was full of tasty looking meals!

Homemade Lemon Popsicles

Summer time! And all summers need popsicles! So here is a lemon popsicle recipe I tried and loved!




Ingredients:

1 cup sugar
1 cup water
zest of two lemons
1 cup lemon juice (I used fresh lemon juice from about 4 large lemons)




Directions:

1. Heat the water and sugar on stove in saucepan until sugar is completely dissolved.

2. Add zest of lemons to saucepan and bring to simmer. Then remove from heat and let cool.

3. Strain out any pulp of lemon juice and add to sugar water in saucepan.

4. Pour mixture into popsicle mold (I used an ice cube tray).

5. Put mold in freezer and let freeze for minimum 5 hours.


6. Take out your homemade popsicles and enjoy!



* If you use the ice cube tray, take out popsicles after two hours in freezer, place two tooth picks in each mold, and then put the popsicles back in freezer for another 3 hours.
