Buckweat and Almond Chocolate Cake

Hi everyone!

Last weekend, my mom tried a new chocolate cake recipe- and it was delicious! So I decided to share the recipe with you too! Here it is.

*This recipe is from the "La Tartine Gourmande" by Beatrice Peltre.

Ingredients:

7 tablespoons unsalted butter, plus more for mold

3 1/2 oz bittersweet dark chocolate (70% cocoa)

4 large eggs, at room temperature

1/2 cup blond cane sugar

pinch of sea salt

1 teaspoon pure vanilla extract

1/4 cup buckweat flour

1/4 cup almond meal

confectioner's sugar and fruit to garnish

Directions:

Preheat oven to 350 degrees F. Cut a round piece of parchment paper large enough to cover the sides and bottom of a 9-inch round cake mold. Butter the mold and line it with the parchment paper; set aside.

Place the butter and chocolate in a bowl and melt it in a bain-marie .

In the bowl of a stand mixer, beat the eggs with the sugar and sea salt until light and pale in color and the batter has doubled in volume. Gently fold in the vanilla and the melted chocolate mixture. Sprinkle the flour and almond meal over the batter and fold gently to combine.

Pour the batter into the cake mold, place in oven, and bake for 30 minutes. or until the blade of a sharp knife inserted in the middle comes out dry. Remove from the oven, let cool for five minutes, then flip gently onto plate. Remove the parchment paper gently and flip again - the top part will crack and might look a bit messy, but that's normal as the cake rises and falls slightly. Dust with confectioner's sugar and garnish with fruit. Serve at room temperature.

Enjoy!

* As noted in our last post, we will be changing the blog's URL from acfoodphilosophy.blogspot.com to blueberry-bacon.blogspot.com in 10 days. See last post for details.

New Blog Title and URL

Hi everyone!

When Callie and I first started this blog, we weren't exactly sure what to name it. Eventually we came up with the name "Food Philosophy", but decided it would be temporary. Now we have a new name; "Blueberry-Bacon." This does not only mean the name of our blog will change, but the URL will too. So, 20 days from today, this blog's URL will change from acfoodphilosophy.blogspot.com to blueberry-bacon.blogspot.com. You will be reminded about this change in the next post too. So don't forget!

Minnesota State Fair

A few weekends ago, my family went to the Minnesota state fair. We had a wonderful time! The rides were super fun and the food was fantastic! Here are a few of the foods I ate there.

1. Corn on the cob (what would a fair be without corn?)

2. Sweet corn ice cream with honey bacon as a topping (yes, it sounds weird, but it is the BEST!)... unfortunately, I was enjoy it so much I forgot to take a picture! Oops! But I do remember the name of the food stand; the Blue Moon. And I'm sure there were many other fantastic foods there, not just the ice cream.

3. Mini donuts

4. Brats

5. Cheese Curds (in my opinion, and many others, these are the best in the world)

6. Cotton Candy

Hope you enjoy this update!

Restaurant Review: Big Jim's

My family was driving to Minnesota to spend some of the summer there. On the way, we stopped off at a fabulous restaurant called Big Jim's. We had first heard about the place from the show Diners, Drive-Ins, and Dives. So when we were in Pennsylvania, on our way to MN, we couldn't resist going! Here are a couple of the things we ordered at Big Jim's.

The Italian Wedding Soup:

I had this, and it was wonderful!

Veal Cutlet ala Parmigiana:

The portions were huge, so we mostly shared and didn't order a lot. But the menu was full of tasty looking meals!

Here is Big Jim's website: http://www.bigjimsrestaurant.com  Hope you can go there too!

Homemade Lemon Popsicles

Summer time! And all summers need popsicles! So here is a lemon popsicle recipe I tried and loved!

Ingredients:

1 cup sugar
1 cup water
zest of two lemons
1 cup lemon juice (I used fresh lemon juice from about 4 large lemons)

Directions:

1. Heat the water and sugar on stove in saucepan until sugar is completely dissolved.

2. Add zest of lemons to saucepan and bring to simmer. Then remove from heat and let cool.

3. Strain out any pulp of lemon juice and add to sugar water in saucepan.

4. Pour mixture into popsicle mold (I used an ice cube tray).

5. Put mold in freezer and let freeze for minimum 5 hours.

6. Take out your homemade popsicles and enjoy!

* If you use the ice cube tray, take out popsicles after two hours in freezer, place two tooth picks in each mold, and then put the popsicles back in freezer for another 3 hours.

Hello everyone! This is the first post we will be sharing. And what a better way than to start with a wonderful muffin recipe? I love these blueberry muffins. They can be made without dairy (for those with allergies) and are super tasty! Enjoy!

Ingredients:

1 cup oatmeal
1 cup sour milk (and for those with dairy allergies: 1/2 cup of apple juice + 1/2 cup of apple sauce)
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup brown sugar
1 egg beaten
1/4 cup melted butter (or coconut oil for those with dairy allergies)
1 cup blueberries

Directions:

Preheat oven at 400 degrees.
Mix oats and milk (juice and apple sauce) in bowl and let stand.
Combine dry ingredients in a separate bowl.
Add egg and butter (coconut oil) to oat and milk mixture. Stir.
Add brown sugar to oat and milk mixture. Stir.
Add dry ingredients to wet ingredients.
Stir until just combined (don't over stir). Then lightly stir in blueberries.
Fill muffin cups 3/4 of the way full with batter.
Let muffins bake at 400 degrees for 20 minutes.

Enjoy!
