Blueberry Muffins


Hello everyone! This is the first post we will be sharing. And what a better way than to start with a wonderful muffin recipe? I love these blueberry muffins. They can be made without dairy (for those with allergies) and are super tasty! Enjoy!

Ingredients:

1 cup oatmeal
1 cup sour milk (and for those with dairy allergies: 1/2 cup of apple juice + 1/2 cup of apple sauce)
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup brown sugar
1 egg beaten
1/4 cup melted butter (or coconut oil for those with dairy allergies)
1 cup blueberries

Directions:

Preheat oven at 400 degrees.
Mix oats and milk (juice and apple sauce) in bowl and let stand.
Combine dry ingredients in a separate bowl.
Add egg and butter (coconut oil) to oat and milk mixture. Stir.
Add brown sugar to oat and milk mixture. Stir.
Add dry ingredients to wet ingredients.
Stir until just combined (don't over stir). Then lightly stir in blueberries.
Fill muffin cups 3/4 of the way full with batter.
Let muffins bake at 400 degrees for 20 minutes.
